Roasted Cherry Tomato Crostini with Alderwood Smoked Salt

 

 

We love cherry tomatoes.  Especially warmed by the sun, straight from the garden.   This recipe lets the tomato be the star!


Ingredients:

1 Loaf Baguette
1 Basket of Ripe Cherry Tomatoes
1/2 cup Cheve Goat Cheese

1 Tsp Applewood Smoked Salt

 

Instructions:

 

Preheat oven to 325 degrees.

 

Slice cherry tomatoes in half if large otherwise leave whole and place in shallow baking dish.  Drizzle with olive oil.  

 

Roast tomatoes for 10 to 20 minutes (tomatoes will collapse losing some of their liquid).   Remove from oven and set aside.

 

Slice baguette into diagonal slices 1/3 inch thick. 

 

Toast crostini in oven for five minutes.

 

For each toast:

Spread a small amount of goat cheese on each toast. Top with roasted cherry tomato

Optional  (drizzle with a bit of the olive oil /tomato juice left in the roasting pan)

Sprinkle with smoked salt

 

Serve as an appetizer with a nice glass of red wine.  

 

Notes:

We used Yakima Applewood Smoked Salt from Almond Blossom.   Other sea salts can be substituted.

 

 

 

Honey Crisp / Goat Cheese Crostini with 18 Year Balsamic Vinegar Reduction and Maple Chipotle Spiced Pecans

 

This easy, elegant appetizer works for holiday parties as well as a wine dinner with friends.   The suggested ingredients can be substituted with your favorite fruit, cheese or nuts. 

 

Ingredients:

1 Loaf Baguette

1 Honey Crisp Apple

1/2 cup Goat Cheese

1/3 Cup Balsamic Vinegar Reduction
1/4 Cup Maple Chipotle Pecans

 

Instructions:

 

Preheat oven to 350 degrees. 

 

Pour balsamic vinegar into saute pan and reduce over low heat stirring occasionally until reduced by half. Syrup will be quite thick. Remove from heat.

 

Slice baguette into diagonal slices 1/3 inch thick.  Brush with olive oil or butter if desired.

 

Toast crostini in oven for five minutes.

 

Slice Honey Crisp Apple into thin slices and put in lemon water to prevent browning.

 

Rough chop pecans 

 

For each toast:

Spread a small amount of goat cheese.

Top with one or two thin apple slices
Sprinkle with pecans
Drizzle with reduced balsamic

 

Serve as an appetizer with a nice glass of red wine.

 

Notes:
Another variety of crisp apples could be substituted.

Maple Chipotle Pecans from Almond Blossom.   Candied or plain toasted pecans can substituted.
